Summer Fresh Salad

I'm going to the Dominican Republic in August and I gotta get my health together ya'll! One thing i've opted into doing is to have a salad week! Yes a week full of salads, but not my normal struggle salad, but making some restaurant style salads where I am satisfied with my meal and not running for a burger afterwards!


Summer Fresh Salad

Chicken Breasts

Honey Walnuts


Feta Cheese


Mixed Greens



1. Season your chicken breast with salt and pepper.  Pour 1 tablespoon of olive oil in your pan and warm it up over medium heat. 

2. Cut up chicken and added to pan. Cook until chicken is well done. 

3. Chop up your strawberries and avocado in to small bites.

4. Wash your mixed greens and place on plate or Tupperware bowl. (Reason for Tupperware bowl is coming later)

5. Sprinkle chicken, walnuts, strawberries, feta cheese, avocado on top of the mixed greens. Drizzle with your choice of dressing. (I like a poppyseed dressing or a raspberry vinaigrette.)

Optional Step: If you used the Tupperware bowl, place all ingredients in bowl and drizzle with dressing of your choice. Place top over mixture and shake it up. This allows the salad to be evenly covered with dressing for optimum flavor.
